Treadmill Hill Burner + Egg White Muffins {Low-Calorie}

Hey there! Ohhh do I have a good one for you today!

I wouldn’t go shouting from the rooftops and tell all your friends that you’re whipping up muffins for brunch and then show up with these bad boys. I call them “muffins” but I also call Kale one of my favorite foods….if ya get my drift. These are, in fact, a wonderful healthy alternative for your personal morning breakfasts.

As I was doing my Treadmill Hill intervals I was trying to think about everything and anything to distract me from my legs that were on fire and I suddenly got a craving for sweet potatoes….like any normal person would. Here is the Treadmill Hill Burner I put together and I can only make it through 1.5 intervals. I can never hit the second 7.0 for 2 minutes without the vision of me somersaulting off the back of the treadmill popping in my head. Let me know if you try it and how it goes!

I digress…I came up with this low-calorie, nutrient dense egg recipe as I was running and it was so very delicious! The bottom of the egg whites are lined with sweet potato slices which give the egg white muffins a delicious sweetness in each bite.

I sauteed some spinach with minced garlic, chopped up a red bell pepper, and one large yellow onion. Pour the egg whites right over top. It is really that simple.

I usually set my alarm for the horrid hour of 4:45am to run so I do have to confess that sometimes I sleep in my gym clothes so I can pop out of bed and go. Anyone else?! Buehler? Buehler? I finally found a workout shirt that feels like PJs and it is the best thing ever.  $10.00 from HERE.  Napping while doing calf lifts = ultimate multi-tasking.

Good thing my friends still love me despite me coming straight from the gym to a lunch date. Workout clothes, 97% of the time.

You guys are all invited to my house for a movie night because I cannot stop making popcorn in this thing. Best white elephant gift ever. But really…probably the best one ever. Rented The Interview last night, anyone else seen it?

I hope you guys enjoy these! You can add whatever you want to your egg white muffins, be creative! These are great to whip up if you have a few different vegetables that are about to go bad.

Egg White Muffins {Low-Calorie}

INGREDIENTS

  • 1 medium sweet potato, sliced
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 2 cups of spinach
  • 1 glove of garlic, minced

DIRECTIONS

  1. Preheat the oven to 350. Coat a muffin pan with non-stick spray.
  2. Place the sweet potato slices on the bottom of the muffin pan. Bake for approximately 15 minutes.
  3. Over medium/low heat, saute the spinach and garlic.
  4. Place the pepper, onion, and spinach into the muffin pan, on top of the sweet potato.
  5. Pour the egg whites into each muffin, almost to the top.
  6. Bake for approximately 15-20 minutes.
