It’s summer and I don’t know about you, but I need some new recipes for picnics, barbecues, and camping! My husband and I recently went paddle camping for his birthday (while the kids were at camp) and when I was trying to figure out what to pack I longed for something new and different. So I put together some delicious ingredients to make this hearty, tasty, easy Italian pasta salad recipe.
I think it’s safe to say it’s one of my favorite pasta salads right now … and eating it by the river may have tasted it even better than usual! Oh how much I love summer activities, especially when it comes to water. 🙂

Simple Italian pasta salad
This simple Italian pasta salad recipe is the perfect dish for any picnic, barbecue, or camping trip this summer. It comes together in just 20 minutes.
ingredients
For the pasta salad
- 8th Ounces Whole wheat pasta, cooked according to the instructions on the packet
- 8th Ounces Cherry tomatoes, halved
- 2 cups mixed green, (Salad mix, spinach or rocket), chopped
- 3/4 Cup Cheddar cheese, cut into small cubes (about 4 ounces)
- 1/2 Cup pitted Mediterranean olives, chopped
- 1/4 Cup fresh basil, chopped
- 1/4 Red onion, diced
- 2 Ounces sliced salami, chopped

In a large bowl, mix the cooked pasta, tomatoes, vegetables, cheese cubes, olives, basil, red onion and salami.

Mix the dressing ingredients in a small glass with a tightly fitting lid. Shake to emulsify and mix into the pasta salad until everything is well covered. Serve immediately or refrigerate for up to 3 to 4 days.
